Bikini

Serves 10 servings

For the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Cocktail (yields 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, for finishing

Directions

Making the Cordial: Combine the listed components into a saucepan, bring to a light boil, mixing to dissolve. After that, remove from the stove allowing it to reach room temperature fully. Transfer to a sealable bottle, seal and store in the fridge, it will last for around one month.

To make Cocktail Base: Pour the specified liquid ingredients into a large bottle, leave to sit for 60 minutes, then pass it through preferably using a fine cloth, so it's fully clarified.

When ready to serve: Measure 85ml from the batch mix to a stirring glass filled with ice, and agitate gently for a minute until cold. Filter into a cold coupe glass or similar, top with the cranberries adding the final touch by giving it a brief mist of mandarin oil over the top.
